Today we are making "Mutton Momtaz," and it’s being cooked by my very own Momtaz—Ipsha. We actually stumbled upon this unique recipe online and thought, why not try it? But of course, we tweaked it by adding our favorite extra spice and Jompesh ghee to make it even more awesome. This rich, royal mutton dish pairs beautifully with hot, deep-fried porotas or a plate of steaming rice. Give it a try because all our friends loved it.

Place the mutton pieces in a bowl and add yogurt, ginger-garlic paste, cumin powder, crushed black pepper, crushed coriander seeds, a touch of chili powder, and salt. Mix thoroughly by hand, cover, and let it marinate for at least 30 minutes to lock in the flavors.

Boil the onions, almonds (or cashews), and green chillies in a pot of water for 10 minutes until soft. Blend the ingredients into a smooth, velvety paste. Don't throw away the leftover boiling water—save it to use as broth later!

Heat a mix of oil and ghee in a pressure cooker. Sizzle the whole spices (cinnamon, bay leaves, cardamoms, cloves, mace, black pepper, and cumin seeds) until aromatic. Add the marinated mutton, extra chili powder, and the saved onion-nut water. Lock the lid and pressure cook until the meat is perfectly tender.

Open the cooker to reveal perfectly tender mutton. Pour in the blended onion-nut paste and watch the gravy instantly transform. Shift the meat into a wider pan to stir easily without breaking the pieces. Simmer until the gravy thickens beautifully, then finish with garam masala, fresh green chillies, and a handful of coriander leaves.
